Quick Shrimp Grilled Cheese (Printable)

Succulent garlic butter shrimp and melted cheese layered on crisp toasted sourdough bread.

# What You Need:

→ Shrimp

01 - 7 oz raw shrimp, peeled and deveined
02 - 1 tablespoon unsalted butter
03 - 2 cloves garlic, minced
04 - 1 tablespoon fresh parsley, chopped
05 - Pinch of salt and black pepper

→ Sandwich

06 - 4 slices sourdough bread
07 - 2 tablespoons unsalted butter, softened
08 - 3.5 oz mozzarella cheese, shredded
09 - 3.5 oz sharp cheddar cheese, shredded
10 - 1 tablespoon mayonnaise (optional)

# How To Make It:

01 - Melt 1 tablespoon butter in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add shrimp, season with salt and pepper, and cook 2 to 3 minutes per side until pink and fully cooked. Stir in parsley and remove from heat.
02 - Butter one side of each bread slice. Place two slices buttered side down on a flat surface. Layer half the mozzarella and cheddar evenly over the bread, then distribute the cooked shrimp. Top with remaining cheese and the other bread slices, buttered side up.
03 - Heat a large non-stick skillet or griddle over medium-low heat. Optionally spread a thin layer of mayonnaise on the outside of the bread for extra crispiness. Place sandwiches in skillet and cook 3 to 4 minutes per side, pressing gently, until golden brown and cheese is melted.
04 - Remove sandwiches from skillet, let rest for 1 minute, then slice in half and serve immediately.

# Expert Suggestions:

01 -
  • It tastes like a fancy restaurant dish but takes barely longer than your usual grilled cheese.
  • The garlic butter shrimp completely transforms the sandwich from ordinary to something you'll crave on random Tuesdays.
  • Golden, melty cheese and tender shrimp together feel indulgent without any fuss.
02 -
  • If your shrimp releases a lot of liquid in the pan, cook it a bit longer to evaporate the excess—wet shrimp will make your bread soggy.
  • Medium-low heat is your friend; rushing with higher heat gets you burnt bread and cold cheese in the middle, which is its own kind of heartbreak.
03 -
  • Buy shrimp that already look plump and smell like the ocean, not like fishy water—good shrimp makes all the difference in this sandwich.
  • Keep your heat at medium-low and don't be tempted to rush; the slow, gentle cooking is what gets you that perfect golden crust and fully melted cheese.
