# How To Make It:

01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper.

# Expert Suggestions:

01 -
  • Everything roasts on one pan while you prep the rest, so cleanup is almost nonexistent.
  • The sweet potatoes get crispy edges and creamy centers without any frying or fuss.
  • You can pile on whatever toppings you have, and it always tastes bright and complete.
02 -
  • Do not overcrowd the baking sheet or the sweet potatoes will steam and turn mushy instead of crispy.
  • Taste the roasted sweet potatoes before assembling, if they need more salt or spice, add it then while they are still hot.
  • Always warm your tortillas or they will tear and ruin the whole vibe of the taco.
03 -
  • Roast extra sweet potatoes and keep them in the fridge, they reheat beautifully and make taco assembly even faster next time.
  • If your tortillas keep tearing, double them up for sturdier tacos that hold all the toppings without falling apart.
